My cousin caught a shark on her fishing trip in Florida, she asked for my Shark Bite recipe and I typed it out for her......sooo

Shark Bites
Skin the filets and cut into bite sized cubes.
In a large bowl, soak the bites in whole milk for at least an hour. I do overnight.
Toss the milk and rinse the bites with clear water and drain well.
You’ll need three bowls or loaf pans for the drench and dredge.
Pan 1- 2 0r 3 eggs and ˝ cup milk, 2tsp of Worcestershire sauce mix it well
Pan 2 - 1 ˝  cups or so flour, garlic salt, and 2 tbsp Old Bay.
Pan 3 – I part flour and 2 parts Panko bread crumbs, tbsp Old Bay
Deep fryer or large sauce pan with 3” or 4” peanut or canola oil. Must be 320° or more

1.   Dust the bites first in the flour mixture (that’s right)
2.   Wet them in egg mixture
3.   Dust them in Panko flour mixture
4.   Drop in hot oil leave a little room so they cook evenly
5.   About 2 minutes tops or till golden, drain on paper grocery bag with paper towels on top. Sprinkle with garlic salt or spices of your     choice while still hot out of the fryer.
